Ingredients:
- 5 large sweet potatoes or yams (about 1.25kg)
- 12 carrots (about 1kg)
- 3/4 cup orange juice
- 2 tbsp liquid honey
- 2 tbsp butter
- 2 tsp cinnamon
- 2 cloves of minced garlic
- 1 tsp salt (optional)
- 1 1/2 cups fresh bread crumbs
- 1/2 cup chopped pecans
- 1/3 cup melted butter
- 1 tbsp chopped fresh parsley
Directions:
Peel and cut potatoes and carrots into large chunks. Cook until very tender, mash well.
Add other ingredients (not topping) and put in greased 13 by 9 inch pan. For topping,
combine ingredients and spread over potato mixture. Cover with foil and bake at 350F for
20 minutes then uncover and bake for 30 minutes or until heated through.
