Heat oven to 175C. Grease and flour cake pan(s). Beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrot, fold in pecans/raisins and pour into pan. Bake for ~40-50 minutes or until just done in centre (toothpick test). Cool ten minutes in pan and then turn out on rack to finish cooling. For the frosting - combine butter, cream cheese, powdered sugar and 1 tsp vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans
