Ingredients:

• 1/2 cup butter or hard margarine
• 1 cup brown sugar, packed
• 1 large egg
• 1/2 tsp vanilla flavouring
• 1 cup all-purpose flour
• 1 cup quick rolled oats
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1 cup semi-sweet chocolate chips
• 1/2 cup chopped walnuts (optional)

Directions:

Turn oven to 350F/175C. Put butter or margarine into a large bowl. Add brown sugar, egg and vanilla. Beat on medium speed until smooth. Add the rest of the ingredients. Stir with spoon until all the flour is mixed in. Grease the cookie sheets. Drop by rounded tablespoonfuls onto the cookie sheets, 2 inches (5cm) apart - this will allow room for cookies to spread out. Bake on the center rack in the oven for 10-12 minutes. Use oven mitts to remove the cookie sheets to the wire rack. Let stand 2 minutes. Remove the cookies to the waxed paper on the counter. Cool completely. Store the cookies in a container with a lid with waxed paper between the layers.
